Asperges sauvages des Aspres
In the Aspres, wild asparagus (Asparagus acutifolius) grow among the bushes and thickets. They are long and slender. Once the collection is complete, they are cut into small pieces with a half-moon chopping blade on a chopping block, and then thrown into a hot pan. At the end the asparagus is mixed with eggs to make a tasty omelette.
